If you are heading to or hosting a party, Cool Ranch Kale Chips will always be a delicious hit! Although I highly recommend using a food dehydrator (set to 115* F), you could also bake them on the lowest setting. Everyone loves chips!!
Ingredients:
- 2 heads of kale
- 2 c. sunflower seeds, soaked and drained
- 1 red pepper
- 1 Tbsp. onion powder
- 1/2 tsp pink salt
- 1 tsp apple cider vinegar
- 1 lemon, juiced
- 1-4 Tbsp. water
Instructions:
Wash kale and pat dry with paper towels. Remove stems and pull apart into small (chip size) pieces. Place in a large bowl. Put the rest of the ingredients in the blender and blend until smooth and creamy. Pour over pieces of kale and massage the creamy mixture into the kale (yes, with your bare hands). This will take a few minutes to get it evenly coated. Dehydrate at 115 degrees F for about 12 hours or until completely dry and crunchy.
PS– This recipe makes amazing kale chips but would also work well as a dip for veggies or crackers or as a condiment on raw burgers, wraps, etc.
And…You may want to double the batch- they go fast!
